- 1 tbsp olive oil
- 1 tbsp sesame oil
- 2 shallots, finely minced
- 2 garlic cloves, crushed
- 2 inch knob of ginger, grated
- 2 cups shelled edamame
- 3 cups broth
- 1 ½ tbsp soy sauce
- Fry shallots, ginger and garlic in oil until golden.
- Add broth, beans and soy sauce.
- Simmer, covered, for 20 minutes or until soybeans are cooked.
- Puree in your blender.
